I am an undergraduate student majoring in Biological Sciences. Our work centers around evaluating and improving bioaccessible nutrients in common bean. We currently use peristaltic and gastric simulators, which emulate the dynamic wave-like contractions of the digestive system and other biological processes, to better understand the release of nutrients during digestion from samples of common bean sourced from farms throughout California. My day-to-day affairs involve colorimetric analysis, processing of common bean samples, and preparation of digestion fluids (saliva/gastric juice).
